Sauces
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 small onion finely chopped
2 tablespoons dry white wine
1-1/2 cups milk
1/4 teaspoon each of salt and freshly ground black pepper
1/4 cup grated Parmesan cheese
In a 4-cup measuring cup, microwave butter, uncovered, on high for 45 seconds. Whisk in flour until smooth. Add remaining ingredients ( except cheese). Whisk until blended.
Microwave , uncovered, on high for 3-1/2 to 4 minutes or until sauce is thick and creamy. Stir 2 or 3 times during cooking. Then, stir in Parmesan. Serve hot over green beans, broccoli or sautéed zucchini. Makes 1-1/3 cups.
